Easy Stove-Top Candied Almonds Recipe (no eggwhites)

There are many ways of making candied almonds, however, some of the most popular recipes are oven-roasted that include eggwhites. I love candied almonds and sometimes. I just need a simple and quick recipe for my occasional cravings. This stove-top method takes less than 15 minutes to make and tastes just as delicious as the traditional candied almonds. Plus, it cost just a fraction of the grocery store prices.

For this recipe, I opted to use Trader Joe’s unsalted roasted almonds. Initially, I used raw almonds on the first test batch and find the raw almonds less crunchy even though it was candied. My theory is because the cooking time of this recipe is much shorter than the traditional oven method. If you only have raw almonds, you can roast them first stove-top before adding the rest of the ingredients.

Homemade Candied Almonds Recipe

Equipment: shallow flat pan, parchment paper or a silicone mat

Prep time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes

Ingredients:

Steps:

  1. Place all ingredients in a shallow and flat pan and heat in medium heat.

  2. Mix all ingredients making sure that the almonds are evenly coated.

  3. It will look runny first but keep cooking until all the liquids have disappeared. Keep mixing the almonds to avoid burning.

  4. Once the sugar crystallizes, turn the heat to low and cook for another 2 minutes or until the almonds are golden brown.

  5. Pour the almonds into a parchment paper or silicone mat.

  6. If the almonds stick to each other, carefully separate them immediately while hot.

  7. Allow the almonds to cool before storing them in an airtight container for up to 2 weeks.

I love how easy this recipe is! Aside from just snacking (yes, they’re delicious!), I also use candied almonds in many other recipes like ice cream, chocolate confections, and baked goods. Cheers!
