Strawberry Guava with Cream Cheese Croissants

The strawberry guava cream cheese croissant is a cross-over of inspirations! It’s a combination of Mr. Holme’s Bakehouse’s flurry of flavored croissants and the delicious guava cream cheese pastry from Porto’s Bakery. So I’ve decided to pull out my old favorite jam recipe to fill a buttery and flaky croissant! Must I mention that a classic strawberry jam started to taste incomplete without guava ever since I’ve made this recipe?! They’re just that good together! Among my favorites from Mr. Holme’s Bakehouse is flled with lemon curd and topped with meringue. These flavored croissants are an excellent addition to tea parties, dessert tables and brunches! Or if you’re feeling gourmet just because!

I had planned on posting my strawberry guava jam recipe for awhile and thought that it would be great if we went strawberry picking for the jam! Best idea! We visited a farm close to us, Granny May’s Strawberry Farm, and to our luck - we made it to their last day of picking! July is late in the season and most of the strawberries left were small but they were still juicy and sweet!

Before starting, here are some tips!

  • Make the strawberry guava jam at least 24 hours before assembling the flavored croissants! It’s important that the jam is cold when piping with the cream cheese otherwise it’ll melt the cream.

  • Some overachievers would make their own croissants but why bother when you can just buy some at your local bakery!

  • If unable to make the strawberry guava jam, simply substitute it with a store-bought strawberry jam.

  • Feel free to add more sugar on the whipped cream cheese. I want my cream less sweet since the jam is already sweet!

  • These flavored croissants are great to serve to brunch or tea parties! And be prepared for the swoons and Instagram tags, they look scrumptious!

  • Pastry bags are great to use in piping in both the strawberry guava jam and the whipped cream cheese, however a large Ziploc bag does the trick too! Just snip one of the corners and voila!

Strawberry Guava with Cream Cheese Croissants

Ingredients: 10 butter croissants, jam, 8 oz cream cheese, 1.5 cups whipping cream, 1/4 c sugar, 1 tsp vanilla extract, fresh strawberries to garnish

Equipment: hand or stand mixer with a whisk, spatula, pastry bags or large Ziploc

Directions

  • With a scissor, cut the center of the croissants with an x deep enough but not cutting through bottom.

  • Using a finger, create a hole in the croissant while also lightly pushing on the sides to create more room for the jam.

  • In a bowl, cream together cream cheese and sugar. Continue mixing until all lumps disappear and the mixture looks creamy.

  • Add whipping cream and vanilla and whip until reaching a piping consistency but be careful not to over mix.

  • Place the whipped cream cheese on a pastry bag or a Ziploc bag and pipe on top of the jam. Garnish with a half slice of strawberry.
