London Fog Boba Milk Tea Recipe (Early Grey) | The Sweet Savory Life

London Fog, unsurprisingly, isn’t originally created in London. Though it is unclear exactly why its name bears the city of London, this luxurious drink was created in the Pacific Northwest most notably in Vancouver, Canada. It became popular throughout the rest of PNW (Washington and Oregon) before becoming a Starbucks staple.

So what is London Fog exactly?

It is a blend of half milk half early grey tea infused with vanilla and lavender then topped with a froth and sprinkled with cinnamon. It sounds simple (and it is), but it tastes lavish! The combination of bergamot (oil infused in earl grey) and lavender is a match made in heaven!

London Fog Boba Milk Tea Recipe

Yield: 1 mason jar (Kerr 16 oz) Prep time: 10 minutes Make time: 5 minutes

Equipment: tea infuser (or sifter if tea infuser is unavailable), hand-held frother (optional), milk tea straw

Brown Sugar Tapioca Boba Pearls:

  • For this recipe, I used the tapioca pearl (pictured below). Simply boil for 5 minutes and blanch in ice-cold water.

  • Add 2 tablespoons of water to brown sugar and boil. Pour the brown sugar syrup into the boba pearls and allow it to cool before using. Store in an airtight container in the fridge.

Ingredients:

  • boba pearls (amount to your preference)

  • 2 bags earl grey tea (5 to 6 tsp loose-leaf early grey)

  • 3/4 cup hot water

  • 3/4 cup milk

  • 1/4 tsp vanilla extract

  • 1/4 tsp culinary lavender (or lavender syrup if available)

  • simple syrup (50:50 sugar:water ratio) or other preferred sweeter such as honey

  • ice cubes

  • ground cinnamon for sprinkling (optional but highly recommended)

Preparation:

  1. Steep earl grey tea and lavender in hot water for 3 to 5 minutes.

  2. Discard the tea bags (or loose-leaf tea) and lavender.

  3. Cool the tea in the freezer for at least 5 minutes before using it.

Assembly:

  1. Place the desired amount of boba pearls in the bottom of a 16 oz mason jar (or any glass).

  2. Add ice.

  3. Add 3/4 cups of earl grey tea.

  4. Add vanilla extract and desired amount of sweetener then mix.

  5. Froth cold milk with a hand-held frother. If unavailable, place milk in a mason jar with a lid and shake until bubbly.

  6. Mix in milk to the earl grey tea making sure to leave space for the froth on top

  7. Scrape the froth into the milk tea with a spoon.

  8. Sprinkle with ground cinnamon. (optional)
